Miguel Laffan found its "terroir" 6 years ago at the Luxury Resort L'AND Vineyards in Alentejo.
The Chef has a very proactive approach in its kitchen and believes that cooking excellence can only be attained through an insaciable research, determination and rigour. For him, the freshness of an ingredient is as important as the mental freshness of the person transforming it. This balance is his biggest reference and the philosophy through which he creates successful teams.
Part of his training curriculum is composed of some successful "cooking schools" such as the Antoine Westermann's 3 Michelin Stars Fortaleza do Guincho (relais Châteaux), Roland Chanliuad's 1 Michelin Star Le-jardin-des-remparts in Beune, France, Jean-Marc-Banzo's 2 Michelin stars Le Clous de la violette, at Aix-en-Provence, France.
He has lead teams in top hotels such as Hotel Casa Velha do Palheiro at Funchal (Relais&Châteaux) and Hotel Quinta da Casa Branca, a Small Luxury Hotels' boutique hotel in Madeira.
Miguel Laffan is currently L’AND Vineyard’s Wine Resort Executive Chef, a Small Luxury Hotels' hotel at Montemor-O-Novo, where he has attained his first Michelin Star at the L'AND Restaurant.
