Born in Kyoto, Chef Akira Hayashi began his working career in the most recognized restaurant in Kyoto after graduating from Junior High School. It was here that he developed his culinary skills, becoming an Executive Chef at the age of 30.
He joined Okura Hotels & Resorts in 2006 at Kyoto Okura Hotel as an Executive Sous Chef and then he moved to Okura Macau in January 2011 as part of the pre-opening team. In May 2013 Hayashi-san took another major step in his professional culinary career when he was named Executive Chef to head up the Yamazato Restaurant's Japanese culinary staff here at the Okura Hotel Macau.
Chef Hayashi’s prime mission has always been to create an experience which attracts a clientele of repeat customers through preserving the tradition of Japanese formal full-course dining known as Kaiseki Ryori by always adding new elements of his creations. His objective is to ensure the guests ultimate Japanese dining experience.
In addition to cooking, Hayashi-san has a passion to develop younger staff, helping them to discover their own talents in the same manner in which he was encouraged in his early Kyoto days. He is a whole-hearted believer in excitement, learning and fun!
