One Aldwych hotel Beverage Manager Pedro Paulo’s accolades include Best International Bartender at the Lisbon Bar Show 2016, 2013 United Kingdom Bartenders Guild National Competition winner, 2012 Galvin Cup winner, and 2013 Bols Around the World Bartending Championship runner-up.
In March 2017, Pedro was named one of “The Hot 100” by Harper’s Wine & Spirit magazine, noting “key players who are unafraid to innovate and take risks”.    

Of note, Pedro launched his Showtime Cocktails menu in The Lobby Bar in 2017 with each of the 17 cocktails in the collection inspired by a West End show, celebrating the bar’s location in the heart of Theatreland.  The showstopper “The Origin”, is one of the world’s first Virtual Reality cocktails, and “One Fashioned” is prepared table-side from a custom-made Old-Fashioned Cocktail Trolley for a true moment of live theatre. In Spring 2019, he raises the bar again and launches Spirit of Adventure: A Mixologist’s Discovery, a collection of cocktails showcasing the finest spirits from around the world.
