As the new Head Chef at Gusto, the signature restaurant at the Conrad Algarve, Delfo Schiaffino will continue to craft his passion for fine cuisine under the helm of three-Michelin starred, Heinz Beck.
This new position follows Chef Delfo’s latest stint with Master Chef Heinz Beck as Executive Sous Chef at Brown's Hotel in Mayfair, London.
Over the past year, he has assisted Head Chef Heros De Agostinis in running the kitchen of the prestigious hotel, whilst being instrumental in the opening of Beck at Browns.
Chef Delfo's passion for quality ingredients and fine cuisine started early, growing up in a creative family between Portofino in Italy and Soest in Germany, he developed his varied knowledge of gastronomy across different cultures. By his mid 20's, Chef Delfo had already worked alongside some of the most reputable chefs in the world, including the two-Michelin starred Heinz Winkler in Germany, where he worked up to Sous Chef. He then moved to the three-Michelin star, De Librije in the Netherlands under Jonnie Boer; followed by the one-Michelin star, Pollen Street Social in London with Jason Atherton. Chef Delfo then honed his passion for European dishes overseas in Singapore under Head Chef Luke Armstrong, at the one-Michelin star, The Kitchen at Bacchanalia.
Continuing his journey with Heinz Beck, Chef Delfo is looking forward to offering his inspiring dishes to Gusto guests combining original culinary creations from Beck's La Pergola in Rome (Italy) stretching across Via Aurelia, Via Lulia, Via Domitia and Via Herculea from Rome to Quinto do Lago.
